Apple Broccoli Salad

A crisp and refreshing Apple Broccoli Salad made with fresh broccoli, sweet Honeycrisp apples, crunchy nuts, and a creamy honey dressing. This easy no-bacon broccoli salad is perfect for potlucks, BBQs, or healthy meal prep.

Ingredients
  

  • Salad
  • 4 cups broccoli florets chopped small
  • 1 large Honeycrisp apple diced
  • ½ cup red grapes halved (optional)
  • ½ cup shredded carrots
  • ¼ cup red onion finely diced
  • ¼ cup sunflower seeds
  • ¼ cup sliced almonds or walnuts
  • ¼ cup dried cranberries optional
  • Dressing
  • ¾ cup mayonnaise
  • 2 tbsp Greek yogurt or sour cream
  • 1 –2 tbsp honey to taste
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Wash and chop broccoli into small florets.
  2. Dice Honeycrisp apple and toss with lemon juice to prevent browning.
  3. Slice grapes, dice onion, and prepare carrots and nuts.
  4. In a large bowl, combine broccoli, apple, grapes, carrots, onion, seeds, nuts, and cranberries.
  5. In a small bowl, whisk mayonnaise, Greek yogurt, honey, vinegar, mustard, salt, pepper, and lemon juice until smooth.
  6. Pour dressing over salad and toss gently until coated.
  7. Cover and refrigerate for at least 30 minutes before serving.

Notes

  • Best made ahead for deeper flavor.
  • Honeycrisp apples give the best crunch and sweetness.
  • Blanch broccoli for 1–2 minutes if you prefer a softer texture.
  • Add grilled chicken for a complete meal.
  • Store in refrigerator for up to 3 days.
  • A great fresh alternative to traditional Chicken Salad Chick broccoli salad (without bacon).
