  • ¼ teaspoon salt

  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk or buttermilk

  • ¾ cup apple butter

Method
 

  1. Prepare the oven and pan
  2. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  3. Mix the dry ingredients
  4. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Combine the wet ingredients
  6. In another bowl, whisk the brown sugar, granulated sugar, oil (or melted butter), eggs, vanilla extract, and milk until smooth.
  7. Make the muffin batter
  8. Slowly add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix the batter.
  9. Fill the muffin cups
  10. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  11. Add the apple butter swirl
  12. Add about one teaspoon of apple butter to the top of each muffin. Use a toothpick or knife to gently swirl it into the batter.
  13. Bake the muffins
  14. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  15. Cool and serve
  16. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

You can replace part of the all-purpose flour with whole wheat flour to make the muffins slightly healthier.
