Method
- Prepare the oven and pan
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
- Mix the dry ingredients
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine the wet ingredients
- In another bowl, whisk the brown sugar, granulated sugar, oil (or melted butter), eggs, vanilla extract, and milk until smooth.
- Make the muffin batter
- Slowly add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix the batter.
- Fill the muffin cups
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Add the apple butter swirl
- Add about one teaspoon of apple butter to the top of each muffin. Use a toothpick or knife to gently swirl it into the batter.
- Bake the muffins
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and serve
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Avoid overmixing the batter to keep the muffins soft and fluffy.
Use high-quality apple butter for the best flavor.
You can replace part of the all-purpose flour with whole wheat flour to make the muffins slightly healthier.
