Ingredients

  • For the Muffins
  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple cider reduced to ½ cup
  • ½ cup finely diced apple
  • For the Cinnamon-Sugar Topping
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter melted

Method

  1. Pour the apple cider into a small saucepan and bring it to a gentle simmer over medium heat.
  2. Cook for 10–15 minutes, until the cider has reduced from 1 cup to approximately ½ cup.
  3. Remove from the heat and allow the reduced cider to cool completely.
  4. Preheat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease it.
  5. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. In a large bowl, beat softened butter and sugar for 2–3 minutes, until light and fluffy.
  7. Add the eggs one at a time, mixing well after each addition.
  8. Stir in the vanilla extract.
  9. Gradually mix in the cooled reduced apple cider.
  10. Add the dry ingredients and gently stir until just combined. Do not overmix.
  11. Fold in the finely diced apple.
  12. Divide the batter evenly between the muffin cups, filling each about ¾ full.
  13. Mix the sugar and cinnamon for the topping in a small bowl.
  14. Lightly brush the muffin tops with melted butter and sprinkle generously with the cinnamon-sugar mixture.
  15. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  16. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack.
  17. Serve warm or allow them to cool completely before storing.

Notes

  • Fresh apple cider gives these muffins the strongest flavor.
  • Always cool the reduced cider before mixing it into the batter.
  • Honeycrisp, Granny Smith, Gala, Fuji, and Pink Lady apples work well.
  • Dice the apples into small, even pieces for the best texture.
  • Don't overmix once the flour has been added.
  • Begin checking the muffins at 18 minutes to prevent overbaking.
  • For an apple cider donut-style finish, brush baked muffins with melted butter and roll the tops in cinnamon sugar.
  • Store in an airtight container at room temperature for up to 3 days.
  • Refrigerate for up to 5 days.
  • Freeze individually wrapped muffins for up to 3 months.
