Ingredients
  

  • 2 cups all-purpose flour

  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups diced apples

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin pan with liners.
  2. Mix flour, sugar, baking powder, salt, and cinnamon.
  3. Whisk milk, melted butter, eggs, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in diced apples.
  6. Fill muffin cups ¾ full.
  7. Bake 18–22 minutes until golden.
  8. Drizzle glaze over slightly cooled muffins.
