Apple Muffins

Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil or melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups diced apples

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. Peel and dice apples into small pieces.
  3. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk sugar, brown sugar, milk, oil (or butter), eggs, and vanilla extract.
  5. Add dry ingredients to wet ingredients and mix gently until combined.
  6. Fold in diced apples.
  7. Divide batter evenly into muffin cups (about 3/4 full).
  8. Bake for 18–22 minutes until a toothpick comes out clean.
  9. Let cool before serving.

Notes

Use firm apples for best texture
Do not overmix the batter
Add crumb topping for a bakery-style finish
Store in an airtight container for up to 3 days
