Ingredients
  

  • Salad
  • 2 cups cooked chicken breast diced or shredded
  • 1 ripe avocado diced
  • 1 ripe mango diced
  • 1 cup cucumber chopped
  • ¼ cup red onion finely chopped
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp lime juice
  • Dressing
  • ¼ cup Greek yogurt or mayonnaise
  • 1 tbsp lime juice
  • 1 tsp honey
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • For Serving
  • Butter lettuce or romaine leaves
  • Extra cilantro
  • Lime wedges

Method
 

  1. Dice chicken, avocado, mango, cucumber, and onion.
  2. In a bowl, whisk Greek yogurt, lime juice, honey, salt, pepper, and garlic powder.
  3. Add chicken, avocado, mango, cucumber, onion, and cilantro to a large bowl.
  4. Pour dressing over and gently mix.
  5. Wash and dry lettuce leaves.
  6. Spoon mixture into lettuce boats.
  7. Garnish with cilantro and lime juice.
  8. Serve immediately.
