Bailey’s Irish Cream Brownies

Ingredients
  

  • 1 cup unsalted butter melted
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ¼ cup Bailey’s Irish Cream
  • ¾ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 cup chocolate chips
  • Optional Cream Cheese Swirl for cheesecake brownie style:
  • 4 oz cream cheese softened
  • 2 tbsp sugar
  • 1 egg yolk
  • ½ tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. Mix the wet ingredients.
  3. In a large bowl whisk together melted butter, granulated sugar, and brown sugar until smooth.
  4. Add eggs and flavoring.
  5. Mix in eggs one at a time, then stir in vanilla extract and Bailey’s Irish Cream.
  6. Combine dry ingredients.
  7. In a separate bowl whisk together cocoa powder, flour, salt, and baking powder.
  8. Make the brownie batter.
  9. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  10. Add chocolate chips.
  11. Stir in the chocolate chips to create extra fudgy brownies.
  12. Optional cheesecake swirl.
  13. Mix cream cheese, sugar, egg yolk, and vanilla until smooth. Drop spoonfuls on top of the brownie batter and swirl with a knife.
  14. Bake.
  15. Pour batter into the prepared pan and bake for 28–32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  16. Cool completely.
  17. Let brownies cool in the pan before slicing for clean edges.

Notes

For extra fudgy brownies, slightly underbake them.
High-quality cocoa powder will give a deeper chocolate flavor.
You can replace chocolate chips with chopped dark chocolate.
These brownies pair perfectly with coffee or a scoop of vanilla ice cream.
