Method
- Preheat the oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
- Mix the wet ingredients.
- In a large bowl whisk together melted butter, granulated sugar, and brown sugar until smooth.
- Add eggs and flavoring.
- Mix in eggs one at a time, then stir in vanilla extract and Bailey’s Irish Cream.
- Combine dry ingredients.
- In a separate bowl whisk together cocoa powder, flour, salt, and baking powder.
- Make the brownie batter.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Add chocolate chips.
- Stir in the chocolate chips to create extra fudgy brownies.
- Optional cheesecake swirl.
- Mix cream cheese, sugar, egg yolk, and vanilla until smooth. Drop spoonfuls on top of the brownie batter and swirl with a knife.
- Bake.
- Pour batter into the prepared pan and bake for 28–32 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool completely.
- Let brownies cool in the pan before slicing for clean edges.
Notes
For extra fudgy brownies, slightly underbake them.
High-quality cocoa powder will give a deeper chocolate flavor.
You can replace chocolate chips with chopped dark chocolate.
These brownies pair perfectly with coffee or a scoop of vanilla ice cream.
