Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Pound chicken breasts to an even thickness for even cooking.
In one bowl, beat the eggs. In another bowl, mix breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, paprika, salt, and pepper.
Dip each chicken breast into the eggs, then coat with the breadcrumb mixture.
Place chicken on the baking sheet and drizzle with olive oil or spray lightly.
Bake for 20 minutes until golden and crispy.
Remove from oven and top each piece with marinara sauce and mozzarella cheese.
Return to oven and bake for an additional 10–15 minutes until cheese is melted and bubbly.
Garnish with fresh basil or parsley and serve warm.
