Banana Muffins

Soft and moist Banana Muffins made with ripe bananas and simple pantry ingredients. These easy bakery-style muffins are fluffy, flavorful, and perfect for breakfast, snacks, or a delicious way to use overripe bananas.

Ingredients
  

  • 3 ripe bananas mashed
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 1/2 cup melted butter or oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. Mash ripe bananas in a large bowl until smooth.
  3. Add melted butter (or oil), eggs, and vanilla extract, then mix well.
  4. In another bowl, combine flour, sugar, baking powder, baking soda, and salt.
  5. Add dry ingredients to wet ingredients and mix gently until just combined.
  6. Divide batter evenly into muffin cups (about 3/4 full).
  7. Bake for 18–22 minutes until golden and a toothpick comes out clean.
  8. Let cool slightly before serving.

Notes

Use very ripe bananas for best flavor and sweetness
Do not overmix the batter to keep muffins soft
Add nuts or chocolate chips for variation
Sprinkle a crumb topping for a bakery-style finish
