Pat salmon dry and cut into bite-sized cubes.
In a bowl, toss salmon with olive oil, garlic powder, paprika, salt, pepper, and soy sauce.
Sprinkle cornstarch over salmon and gently mix to coat evenly.
Cook salmon using one method:
Air fryer: 375°F (190°C) for 8–10 minutes
Oven: 400°F (200°C) for 12–15 minutes
Pan-fry: 3–4 minutes per side until crispy
In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar.
Toss cooked salmon bites in bang bang sauce until fully coated.
Garnish with green onions, sesame seeds, and lime juice. Serve immediately.
