- Heat olive oil in a large pot over medium heat.
- Add stew meat and brown on all sides (or brown ground beef and drain excess fat).
- Stir in onion and garlic; sauté for 2 minutes.
- Add carrots, celery, and potatoes.

- Add thyme, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 35–40 minutes.
- Add green beans and corn; simmer for 10 more minutes.
- Adjust seasoning, garnish with parsley, and serve hot.
