Ingredients
  

  • 1 lb beef stew meat or ground beef
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 2 potatoes diced
  • 1 cup green beans chopped
  • 1 cup corn kernels
  • 1 can 14 oz diced tomatoes
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley optional

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add stew meat and brown on all sides (or brown ground beef and drain excess fat).
  3. Stir in onion and garlic; sauté for 2 minutes.
  4. Add carrots, celery, and potatoes.
  5. Pour in diced tomatoes and beef broth.
  6. Add thyme, oregano, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 35–40 minutes.
  8. Add green beans and corn; simmer for 10 more minutes.
  9. Adjust seasoning, garnish with parsley, and serve hot.

Cut vegetables evenly for consistent cooking.

Store in the fridge for up to 4 days or freeze for up to 3 months.
