Ingredients
  

  • 1 can 15 oz black beans, rinsed and drained
  • 1 1/2 cups corn fresh, frozen, or canned and drained
  • 1/2 red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 avocado diced
  • For the Dressing:
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. Rinse and drain black beans. Prepare and chop all vegetables.
  2. In a small bowl, whisk together olive oil, lime juice, honey, cumin, salt, and pepper.
  3. In a large bowl, combine black beans, corn, bell pepper, red onion, cilantro, and avocado.
  4. Pour dressing over the salad and toss gently to combine.
  5. Taste and adjust seasoning if needed.
