Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberries fresh or frozen

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in blueberries gently.
  6. Pour batter into the dish and spread evenly.
  7. Bake for 30–35 minutes until golden and set.
  8. Cool slightly before slicing and serving.

Notes

Toss blueberries with a little flour to prevent sinking.
Do not overmix for the fluffiest texture.
Serve warm with maple syrup and powdered sugar.
