Blueberry Cream Cheese Bars

These Blueberry Cream Cheese Bars are creamy, fruity dessert bars made with a buttery crust, smooth cream cheese filling, and sweet blueberry topping. Perfect for blueberry desserts, brunch treats, or easy make-ahead desserts.

Ingredients
  

  • Crust
  • cups graham cracker crumbs or crushed vanilla wafers
  • 6 tbsp melted butter
  • 2 tbsp sugar
  • Cream Cheese Filling
  • 16 oz cream cheese softened
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 1 egg
  • Blueberry Layer
  • 2 cups fresh blueberries
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Optional Toppings
  • Powdered sugar
  • Lemon zest
  • White chocolate drizzle

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press crust mixture into prepared pan. Bake for 8 minutes and cool slightly.
  4. Beat cream cheese until smooth. Add sugar, vanilla, and egg. Mix until creamy.
  5. Spread cream cheese filling over crust.
  6. In a saucepan, combine blueberries, sugar, cornstarch, and lemon juice. Cook 4–5 minutes until slightly thickened.
  7. Spoon blueberry mixture over cream cheese filling.
  8. Bake 30–35 minutes until center is mostly set.
  9. Cool completely, then refrigerate at least 2 hours before slicing.
  10. Garnish with powdered sugar or lemon zest if desired.

Notes

  • Chill before slicing for cleaner bars.
  • Fresh blueberries work best, but frozen may also be used.
  • Store refrigerated up to 5 days.
