- Preheat Oven:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- Make the Crust:
- In a mixing bowl, combine flour, powdered sugar, melted butter, and salt. Mix until crumbly. Press evenly into the prepared pan.
- Bake the Crust:
- Bake for 15–18 minutes, or until lightly golden around the edges.
- Prepare the Filling:
- In a separate bowl, whisk sugar and eggs until smooth. Add lemon juice, lemon zest, and flour. Mix until combined.
- Add Blueberries:
- Gently fold in fresh blueberries to create that classic lemon blueberry flavor found in many blueberry desserts.
- Bake Again:
- Pour filling over the warm crust. Bake for 20–25 minutes, or until the center is set.
- Cool & Chill:
- Let bars cool completely at room temperature, then refrigerate for at least 1 hour before slicing.
- Serve:
- Dust with powdered sugar before serving if desired.
Notes
Fresh lemon juice gives the brightest flavor.
Do not overbake; the center should be just set.
Frozen blueberries can be used (do not thaw first).
Store in the refrigerator for up to 4 days.
Freeze for up to 2 months in an airtight container.
