Ingredients
  

  • For the Crust:
  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¾ cup unsalted butter melted
  • Pinch of salt
  • For the Lemon Blueberry Filling:
  • 1 cup granulated sugar
  • 2 large eggs
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup all-purpose flour
  • 1 ½ cups fresh blueberries
  • Optional:
  • Powdered sugar for dusting

Method
 

  1. Preheat Oven:
  2. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  3. Make the Crust:
  4. In a mixing bowl, combine flour, powdered sugar, melted butter, and salt. Mix until crumbly. Press evenly into the prepared pan.
  5. Bake the Crust:
  6. Bake for 15–18 minutes, or until lightly golden around the edges.
  7. Prepare the Filling:
  8. In a separate bowl, whisk sugar and eggs until smooth. Add lemon juice, lemon zest, and flour. Mix until combined.
  9. Add Blueberries:
  10. Gently fold in fresh blueberries to create that classic lemon blueberry flavor found in many blueberry desserts.
  11. Bake Again:
  12. Pour filling over the warm crust. Bake for 20–25 minutes, or until the center is set.
  13. Cool & Chill:
  14. Let bars cool completely at room temperature, then refrigerate for at least 1 hour before slicing.
  15. Serve:
  16. Dust with powdered sugar before serving if desired.

Fresh lemon juice gives the brightest flavor.
Do not overbake; the center should be just set.
Frozen blueberries can be used (do not thaw first).
Store in the refrigerator for up to 4 days.
Freeze for up to 2 months in an airtight container.
