Blueberry Waffles

Ingredients
  

  • Waffle Batter
  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 eggs
  • cups milk
  • cup melted butter
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • Optional Toppings
  • Maple syrup
  • Butter
  • Powdered sugar
  • Whipped cream
  • Extra blueberries

Method
 

  1. Preheat waffle iron according to manufacturer instructions and lightly grease if needed.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk eggs, milk, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined.
  5. Fold blueberries carefully into the batter.
  6. Pour batter into the preheated waffle iron.
  7. Cook until waffles are golden brown and crispy.
  8. Repeat with remaining batter.
  9. Serve warm with maple syrup, butter, or desired toppings.

  • Do not overmix the batter for fluffy waffles.
  • Frozen blueberries can be used without thawing.
