Method
- Scramble eggs and set aside.
- Warm tortillas to make them flexible.
- Layer eggs, cheese, meat, tomatoes, and sour cream in the center.
- Place a tostada shell on top.
- Fold tortilla edges over the center.
- Cook seam-side down in a buttered skillet for 2–3 minutes per side until crispy.
- Slice and serve warm.
Notes
Do not overfill to keep folding easy.
Cook seam-side down first to seal.
Add veggies like spinach or avocado for a healthier option.
