Ingredients
  

  • 4 large flour tortillas
  • 4 tostada shells
  • 6 eggs scrambled
  • 1 cup shredded cheddar or Mexican cheese blend
  • 1/2 cup cooked bacon or sausage crumbles
  • 1/4 cup sour cream or breakfast sauce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • Butter or oil for cooking

Method
 

  1. Scramble eggs and set aside.
  2. Warm tortillas to make them flexible.
  3. Layer eggs, cheese, meat, tomatoes, and sour cream in the center.
  4. Place a tostada shell on top.
  5. Fold tortilla edges over the center.
  6. Cook seam-side down in a buttered skillet for 2–3 minutes per side until crispy.
  7. Slice and serve warm.

Notes

Do not overfill to keep folding easy.
Cook seam-side down first to seal.
Add veggies like spinach or avocado for a healthier option.
