Ingredients
  

  • Chai Spice Mix
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • Cake Batter
  • cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brown sugar packed
  • ½ cup granulated sugar
  • ¾ cup vegetable oil or melted butter
  • 3 large eggs room temperature
  • 1 cup milk or brewed chai tea
  • 2 teaspoons vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round pan or bundt pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and chai spice mix.
  3. In a large bowl, mix brown sugar, granulated sugar, and oil until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract.
  6. Add dry ingredients alternately with milk, mixing until just combined.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool cake in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Fresh spices give the best chai flavor
Do not overmix to keep the cake tender
Brewed chai tea can replace milk for deeper flavor
Store covered at room temperature for 2 days
