Ingredients
  

  • Chicken
  • 2 large chicken breasts halved or flattened
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika optional
  • Bruschetta Topping
  • 2 cups cherry tomatoes diced
  • 2 –3 cloves garlic minced
  • ¼ cup fresh basil chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • Balsamic Glaze
  • ½ cup balsamic vinegar
  • 1 –2 tbsp honey or brown sugar optional

Method
 

  1. Season chicken with salt, pepper, garlic powder, Italian seasoning, and paprika.
  2. Heat olive oil in a skillet and cook chicken 5–7 minutes per side until golden and cooked through. Set aside.
  3. In a bowl, mix tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper. Let sit 5–10 minutes.
  4. In a small saucepan, simmer balsamic vinegar (and honey if using) until reduced and slightly thickened.
  5. Drizzle balsamic glaze over cooked chicken.
  6. Top with bruschetta mixture.
  7. Serve immediately or use in pasta, sandwiches, or baked variations.
