Season chicken with salt, pepper, garlic powder, Italian seasoning, and paprika.
Heat olive oil in a skillet and cook chicken 5–7 minutes per side until golden and cooked through. Set aside.
In a bowl, mix tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper. Let sit 5–10 minutes.
In a small saucepan, simmer balsamic vinegar (and honey if using) until reduced and slightly thickened.
Drizzle balsamic glaze over cooked chicken.
Top with bruschetta mixture.
