Ingredients
  

  • 2 lbs potatoes diced (russet or baby potatoes)
  • 14 oz smoked sausage sliced
  • 2 tablespoons olive oil or melted butter
  • 1 packet ranch seasoning mix
  • cups shredded cheddar or Colby Jack cheese
  • ½ teaspoon black pepper
  • Fresh parsley or green onions chopped (optional garnish)

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking dish.
  2. In a large bowl, toss diced potatoes with olive oil, ranch seasoning, and black pepper until evenly coated.
  3. Spread potatoes in an even layer in the prepared baking dish.
  4. Bake uncovered for 20 minutes.
  5. Remove dish from oven and stir in sliced smoked sausage.
  6. Return to oven and bake for an additional 10–15 minutes, until potatoes are fork-tender.
  7. Sprinkle shredded cheese evenly over the top.
  8. Bake for 5 more minutes, or until cheese is melted and bubbly.
  9. Remove from oven, garnish if desired, and serve warm.

Notes

Use any variety of smoked sausage—beef, turkey, or chicken all work well.
For extra flavor, add onions or bell peppers before baking.
Swap cheddar for pepper jack if you like a little heat.
