Ingredients
  

  • 2 cups cooked white rice preferably day-old
  • 2 cups cooked chicken diced or shredded
  • 2 tablespoons oil
  • 2 eggs beaten
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 cloves garlic minced
  • 1/4 cup green onions chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce optional
  • 1 teaspoon sesame oil
  • Salt and black pepper to taste

Method
 

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add beaten eggs and scramble until fully cooked. Remove and set aside.
  3. In the same pan, sauté garlic for about 30 seconds.
  4. Add mixed vegetables and cook until tender.
  5. Stir in cooked chicken and heat through.
  6. Add cold, cooked rice and break up any clumps.
  7. Pour in soy sauce, oyster sauce, and sesame oil.
  8. Stir well to combine all ingredients evenly.
  9. Return scrambled eggs to the pan and mix.
