Method
- Cook lo mein noodles according to package directions. Drain and set aside.
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken and cook 3–4 minutes until fully cooked. Remove and set aside.
- Add remaining oil to the pan. Stir-fry vegetables for 2–3 minutes until crisp-tender.
- In a bowl, whisk together all sauce ingredients.
- Return chicken to the pan, add cooked noodles, and pour sauce over everything.
- Toss well and cook for 2–3 minutes until heated through and evenly coated.
- Stir in green onions and serve hot.
Notes
Use whole wheat noodles for a healthier lo mein recipe.
Add extra vegetables for more color and nutrition.
