Ingredients
  

  • For the Noodles & Chicken
  • 8 oz lo mein noodles or spaghetti
  • 1 lb boneless skinless chicken breast, thinly sliced
  • 2 tablespoons vegetable oil
  • Vegetables
  • 1 cup sliced bell peppers
  • 1 cup julienned carrots
  • 1 cup broccoli florets or snow peas
  • 2 green onions sliced
  • Lo Mein Sauce
  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • ¼ cup chicken broth or water

Method
 

  1. Cook lo mein noodles according to package directions. Drain and set aside.
  2. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken and cook 3–4 minutes until fully cooked. Remove and set aside.
  3. Add remaining oil to the pan. Stir-fry vegetables for 2–3 minutes until crisp-tender.
  4. In a bowl, whisk together all sauce ingredients.
  5. Return chicken to the pan, add cooked noodles, and pour sauce over everything.
  6. Toss well and cook for 2–3 minutes until heated through and evenly coated.
  7. Stir in green onions and serve hot.

Notes

Use whole wheat noodles for a healthier lo mein recipe.
Add extra vegetables for more color and nutrition.
