Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 4 large flour tortillas
  • 2 cups shredded cheese cheddar, mozzarella, or Mexican blend
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Optional:

  • Sour cream salsa, or guacamole for serving

Method
 

  1. Season the cooked chicken with paprika, garlic powder, cumin, salt, and pepper.
  2. Heat a skillet over medium heat and add olive oil or butter.
  3. Place one tortilla in the pan and sprinkle a layer of cheese on top.
  4. Add seasoned chicken, then top with more cheese and another tortilla.
  5. Cook for 2–3 minutes until the bottom is golden and crispy.
  6. Carefully flip and cook the other side until golden and the cheese is melted.
  7. Remove from the pan and let it rest for a minute.
  8. Slice into wedges and serve warm.
