Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 4 large flour tortillas
  • 2 cups shredded cheese cheddar, mozzarella, or Mexican blend
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Optional:
  • Bell peppers and onions for Chicken Fajita Quesadillas

  • Sour cream salsa, or guacamole for serving

Method
 

  1. In a bowl, season the chicken with paprika, garlic powder, cumin, salt, and pepper.
  2. Heat oil or butter in a skillet over medium heat.
  3. Place one tortilla in the skillet and sprinkle a layer of cheese on top.
  4. Add seasoned chicken evenly over the cheese.
  5. Sprinkle more cheese on top for extra meltiness.
  6. Cover with another tortilla.
  7. Cook for 2–3 minutes until golden and crispy.
  8. Carefully flip and cook the other side until cheese is melted.
  9. Remove from heat and let rest briefly.
  10. Slice into wedges and serve warm.
