  • 12 oz pasta
  • 2 chicken breasts sliced
  • 2 medium zucchini sliced or diced
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • Salt and black pepper to taste
  • 1 tsp Italian seasoning
  • Creamy Sauce
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • ½ cup chicken broth
  • 1 tbsp butter
  • Optional Garnishes
  • Fresh parsley
  • Extra Parmesan cheese
  • Red pepper flakes
  • Lemon zest

Method
 

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain pasta.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken with salt, pepper, and Italian seasoning.
  4. Cook chicken for 5–7 minutes until golden brown and fully cooked. Remove and set aside.
  5. In the same skillet, add zucchini and cook for 3–4 minutes until slightly tender.
  6. Add garlic and cook for 1 minute until fragrant.
  7. Reduce heat to medium and add butter, chicken broth, and heavy cream. Stir well.
  8. Slowly add Parmesan cheese while stirring continuously until sauce becomes creamy and smooth.
  9. Return chicken to skillet and add cooked pasta. Toss until fully coated in sauce.
  10. Add reserved pasta water if needed to loosen sauce.
  11. Garnish with parsley, extra Parmesan, or red pepper flakes if desired.
  12. Serve warm immediately.

Notes

  • Do not overcook zucchini to maintain texture.
  • Fresh Parmesan cheese melts best into creamy sauce.
  • Penne, rotini, or fettuccine work well for this recipe.
  • Add cherry tomatoes for extra zucchini and tomato recipes flavor.
  • For lighter zucchini noodle recipes, replace pasta with spiralized zucchini.
