Ingredients
  

  • Oatmeal Base
  • 2 cups rolled oats
  • 1 tsp baking powder
  • tsp cinnamon
  • ¼ tsp salt
  • 2 tbsp maple syrup or honey
  • cups milk
  • 1 large egg
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • Cinnamon Swirl
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp melted butter
  • Glaze
  • ½ cup powdered sugar
  • 1 –2 tbsp milk
  • ¼ tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8×8 baking dish.
  2. In a bowl, mix oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk milk, egg, syrup, melted butter, and vanilla. Combine with dry ingredients.
  4. Mix brown sugar, cinnamon, and melted butter for the swirl.
  5. Pour half the oat mixture into the dish. Sprinkle cinnamon swirl evenly. Top with remaining oat mixture.
  6. Use a knife to gently swirl the layers.
  7. Bake 30–35 minutes until set and golden.
  8. Whisk glaze ingredients and drizzle over warm oatmeal. Slice into squares and serve.

Notes

Use rolled oats for best texture.
Let cool slightly before slicing for clean squares.
Store in the fridge up to 5 days or freeze for meal prep.
