Ingredients
  

  • For the Bars
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter melted
  • 1 cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • For the Cinnamon Swirl
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • Optional Toppings
  • Cream cheese glaze
  • Fresh or frozen blueberries

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
  4. Add eggs and vanilla extract, mixing until fully combined.
  5. Gradually stir in the dry ingredients just until a smooth batter forms.
  6. In a small bowl, mix cinnamon and sugar for the swirl.
  7. Spread the batter evenly into the prepared pan.
  8. Sprinkle cinnamon-sugar mixture over the batter and gently swirl with a knife.
  9. Optional: Sprinkle blueberries evenly over the top or gently fold them into the batter.
  10. Bake for 25–30 minutes, or until the center is set and a toothpick comes out mostly clean.
  11. Allow bars to cool completely before slicing. Drizzle with glaze if desired.

Notes

 
Do not overbake to keep the bars soft and moist.
Blueberries add a flavor similar to blueberry breakfast bars or blueberry granola bars.
