Ingredients
  

  • 2 cups cooked shredded chicken

  • 1/2 cup sour cream or cream cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste
  • Juice of 1 lime
  • 8 –10 corn tortillas
  • Optional Toppings
  • Fresh cilantro
  • Diced avocado
  • Shredded cheese
  • Jalapeño slices
  • Lime wedges

Method
 

  1. Heat the Oil
  2. In a large skillet, heat olive oil over medium heat.
  3. Cook Onion and Garlic
  4. Add diced onion and cook for about 4 minutes until softened. Stir in garlic and cook for 30 seconds.
  5. Add Chicken and Beans
  6. Stir in shredded chicken and white beans.
  7. Add Broth and Seasonings
  8. Pour in chicken broth and add cumin, chili powder, paprika, oregano, salt, and pepper.
  9. Simmer the Chili
  10. Let the mixture simmer for about 10 minutes to develop flavor.
  11. Make It Creamy
