Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 large orange

Method
 

  1. In a large bowl, cream butter and powdered sugar until smooth.
  2. Mix in vanilla extract and orange zest.
  3. In a separate bowl, whisk flour and salt. Gradually add to butter mixture until a dough forms.
  4. Fold in dried cranberries until evenly distributed.
  5. Divide dough in half and shape into 2-inch diameter logs. Wrap tightly and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Slice chilled dough into ¼-inch thick rounds and place on baking sheets.
  8. Bake for 12–15 minutes until edges are lightly golden.
  9. Cool on baking sheet for a few minutes, then transfer to a wire rack.
