Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces cream cheese softened
  • ½ cup heavy cream
  • ½ cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 cup broccoli florets
  • ½ cup sliced mushrooms
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Cut the chicken breasts into bite-sized pieces and season with Italian seasoning, paprika, onion powder, salt, and black pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken and cook for 5–7 minutes, stirring occasionally, until lightly browned and nearly cooked through. Transfer to a plate.
  5. Reduce the heat to medium and add the butter to the skillet.
  6. Add the minced garlic and cook for about 30 seconds.
  7. Add the softened cream cheese, heavy cream, and chicken broth. Stir until the cream cheese has melted and the sauce is smooth.
  8. Stir in half of the Parmesan cheese.
  9. Add the broccoli and mushrooms and cook for 3–4 minutes.
  10. Return the chicken to the skillet and stir until everything is evenly coated.
  11. Sprinkle the mozzarella and remaining Parmesan over the top.
  12. Transfer the skillet to the oven and bake for 15–20 minutes, until bubbling and golden.
  13. Garnish with fresh parsley and serve hot.

Notes

  • Boneless, skinless chicken thighs can be substituted for chicken breasts.
  • Soften the cream cheese before making the sauce for a smoother texture.
  • Don't overcook the chicken during the skillet step because it will continue cooking in the oven.
  • Add spinach, zucchini, cauliflower, or bell peppers for extra vegetables.
  • For a butter chicken-inspired version, add curry powder, turmeric, and a pinch of cayenne instead of Italian seasoning.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently in the microwave or oven until heated through.
