Crock Pot Beef and Broccoli

Tender slow-cooked beef in a savory garlic soy sauce with fresh broccoli. An easy crockpot dinner that tastes better than takeout and perfect for healthy crockpot recipes.

Ingredients
  

  • 1.5 lbs flank steak or sirloin thinly sliced
  • 1 cup low-sodium soy sauce
  • 1 cup beef broth
  • ¼ cup brown sugar
  • 4 cloves garlic minced
  • 1 teaspoon grated ginger optional
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 3 cups fresh broccoli florets

Method
 

  1. Place sliced beef into the crockpot.
  2. Mix soy sauce, broth, brown sugar, garlic, and ginger. Pour over beef.
  3. Cook on low for 5–6 hours or high for 3 hours.
  4. Mix cornstarch and water. Stir into crockpot to thicken sauce.
  5. Add broccoli in the last 30 minutes of cooking.
  6. Stir and cook until broccoli is tender.

Notes

Slice beef against the grain for tenderness.
Add broccoli at the end to keep it crisp.
Serve over rice or noodles.
Use gluten-free soy sauce if needed.
