Method
- Season the Beef:
- Season beef chunks with salt, pepper, and garlic powder. Place into the slow cooker.
- Add Vegetables & Liquid:
- Add sliced onion and bell pepper. Pour in beef broth and Worcestershire sauce. Stir gently.
- Slow Cook:
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
- Add Tortellini & Cream:
- About 30 minutes before serving, stir in cheese tortellini and heavy cream. Cover and cook until pasta is tender.
- Melt the Cheese:
- Sprinkle shredded provolone or mozzarella over the top. Cover and cook for 10–15 minutes until melted.
- Serve:
- Stir gently and serve hot.
Notes
Add mushrooms for extra flavor.
For a lighter version, use half-and-half instead of heavy cream.
Avoid adding tortellini too early to prevent overcooking.
Store leftovers in the refrigerator for up to 4 days.
Reheat with a splash of broth or milk to maintain creaminess.
