Ingredients
  

  • pounds beef sirloin or stew beef cut into chunks
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 small onion sliced
  • 1 green bell pepper sliced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 package 19–20 oz refrigerated cheese tortellini
  • 1 cup heavy cream
  • cups shredded provolone or mozzarella cheese

Method
 

  1. Season the Beef:
  2. Season beef chunks with salt, pepper, and garlic powder. Place into the slow cooker.
  3. Add Vegetables & Liquid:
  4. Add sliced onion and bell pepper. Pour in beef broth and Worcestershire sauce. Stir gently.
  5. Slow Cook:
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
  7. Add Tortellini & Cream:
  8. About 30 minutes before serving, stir in cheese tortellini and heavy cream. Cover and cook until pasta is tender.
  9. Melt the Cheese:
  10. Sprinkle shredded provolone or mozzarella over the top. Cover and cook for 10–15 minutes until melted.
  11. Serve:
  12. Stir gently and serve hot.

Notes

Add mushrooms for extra flavor.
For a lighter version, use half-and-half instead of heavy cream.
Avoid adding tortellini too early to prevent overcooking.
