Crock Pot Pepper Steak

Ingredients
  

  • lbs top sirloin steak thinly sliced
  • 2 bell peppers red and green, sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • ¾ cup beef broth
  • cup soy sauce
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon cornstarch
  • 1 teaspoon black pepper
  • ½ teaspoon ground ginger optional
  • Optional Add-Ins
  • Sliced mushrooms
  • Red pepper flakes
  • 1 teaspoon sesame oil

Method
 

  1. Lightly grease the inside of your slow cooker.
  2. Place thinly sliced sirloin steak evenly in the bottom of the crock pot.
  3. Add onion, garlic, and half of the sliced bell peppers on top of the beef.
  4. In a bowl, whisk together beef broth, soy sauce, brown sugar (or honey), cornstarch, black pepper, and ginger.
  5. Pour the sauce evenly over the beef and vegetables.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  7. Add the remaining bell peppers during the last 45 minutes of cooking to keep them tender-crisp.
  8. Stir gently and allow the sauce to thicken before serving.

Notes

Slice beef thinly against the grain for the most tender results.
Adding peppers later prevents them from becoming mushy.
For extra flavor, add a splash of sesame oil at the end.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
