Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 3 bell peppers sliced
  • 1 large onion sliced
  • 1 can diced tomatoes with green chilies 10 oz
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lime
  • Fresh cilantro optional garnish

Method
 

  1. Prepare the vegetables
  2. Slice the bell peppers and onion into thin strips.
  3. Add chicken to crockpot
  4. Place the boneless skinless chicken breasts at the bottom of the crockpot.
  5. Add vegetables
  6. Spread the sliced peppers and onions evenly over the chicken.
  7. Season the mixture
  8. Sprinkle chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper over the ingredients.
  9. Add tomatoes and oil
  10. Pour the diced tomatoes with green chilies on top and drizzle with olive oil.
  11. Slow cook
  12. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken becomes tender.
  13. Shred the chicken
  14. Use two forks to shred the chicken directly in the crockpot and mix with the vegetables and juices.
  15. Finish with lime juice
  16. Add fresh lime juice, stir gently, and garnish with cilantro if desired.
