- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
- Add the diced onion and garlic to the skillet and cook for 2 minutes until fragrant.
- Transfer the beef mixture to the crockpot.
- Stir in taco seasoning, beans, corn, diced tomatoes, and tomato sauce.
- Mix everything well until evenly combined.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours.
- About 20 minutes before serving, sprinkle shredded cheese evenly over the top.
- Cover again and cook until the cheese is melted.
- Stir gently before serving if desired.
Notes
Browning the beef first adds better flavor and texture.
Use lean ground beef for a lighter option.
Ground turkey or chicken can be substituted for beef.
Add jalapeños or extra chili powder for more heat.
Leftovers store well in the refrigerator for up to 3 days.
