Ingredients
  

  • lbs ground beef
  • 1 packet taco seasoning
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can black beans drained and rinsed
  • 1 can kidney or pinto beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 1 cup tomato sauce or salsa
  • 2 cups shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream shredded lettuce, green onions, cilantro

Method
 

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
  2. Add the diced onion and garlic to the skillet and cook for 2 minutes until fragrant.
  3. Transfer the beef mixture to the crockpot.
  4. Stir in taco seasoning, beans, corn, diced tomatoes, and tomato sauce.
  5. Mix everything well until evenly combined.
  6. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
  7. About 20 minutes before serving, sprinkle shredded cheese evenly over the top.
  8. Cover again and cook until the cheese is melted.
  9. Stir gently before serving if desired.

Notes

Browning the beef first adds better flavor and texture.
Use lean ground beef for a lighter option.
Ground turkey or chicken can be substituted for beef.
Add jalapeños or extra chili powder for more heat.
Leftovers store well in the refrigerator for up to 3 days.
