In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, and water. Set aside.
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
Add sliced chicken and cook for 5β6 minutes until golden brown and fully cooked. Remove from skillet and set aside.
Add remaining oil to the skillet.
Add zucchini, bell pepper, and onion. Cook for 4β5 minutes until slightly tender but still crisp.
Add garlic and ginger and cook for 1 minute until fragrant.
Return chicken to the skillet.
Pour stir fry sauce over the mixture and stir well.
Cook for 2β3 minutes until sauce thickens slightly and coats ingredients evenly.
Garnish with sesame seeds and green onions if desired.
Serve hot with rice, noodles, or cauliflower rice.
