Ingredients
  

  • Cookie Dough
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Cinnamon Sugar Coating
  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons melted butter

Method
 

  1. Preheat the oven
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. Mix the dry ingredients
  4. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  5. Cream the butter and sugars
  6. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  7. Add egg and vanilla
  8. Mix in the egg and vanilla extract until well combined.
  9. Combine the dough
  10. Gradually add the dry ingredients to the wet ingredients and mix until a soft cookie dough forms.
  11. Shape the cookies
  12. Scoop about 2 tablespoons of dough and roll into balls. Place them on the prepared baking sheet, leaving space between each cookie.
  13. Bake the cookies
  14. Bake for 10–12 minutes, or until the edges are lightly golden and the centers remain soft.
  15. Add the churro coating
  16. Allow the cookies to cool slightly. Brush the tops lightly with melted butter, then sprinkle or roll them in the cinnamon sugar mixture.

Notes

Do not overbake the cookies to keep the centers soft and chewy.
For thicker bakery-style cookies similar to crumble cookies, chill the dough for 30 minutes before baking.
Add extra cinnamon sugar if you want a stronger churro flavor.
