This Easy Crockpot Taco Casserole is a cheesy, slow-cooked comfort meal made with seasoned ground beef or turkey, beans, salsa, corn, tortillas, and melted cheese. It’s one of the best easy crockpot meals for busy weeknights and family dinners.

Ingredients
  

  • Meat Mixture
  • 1 lb ground beef or ground turkey
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels
  • ½ cup water or broth
  • Layers
  • 6 small flour tortillas cut into strips OR 3 cups tortilla chips
  • 2 cups cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • Optional Toppings
  • Sour cream or Greek yogurt
  • Diced tomatoes
  • Green onions
  • Jalapeños
  • Avocado or guacamole
  • Fresh cilantro
  • Lime wedges

Method
 

  1. In a skillet, cook ground meat until browned.
  2. Add onion and garlic; sauté until softened. Drain excess fat.
  3. Stir in taco seasoning and water; simmer 2–3 minutes.
  4. Mix in salsa, beans, and corn. Heat for 2–3 minutes.
  5. Lightly grease crockpot.
  6. Add a layer of tortillas or chips.
  7. Add meat mixture and sprinkle cheese.
  8. Repeat layers until ingredients are used, finishing with cheese.
  9. Cover and cook on LOW for 3–4 hours or HIGH for 1.5–2 hours.
  10. Let rest 5–10 minutes before serving.
  11. Add toppings and serve warm.

Notes

  • Use lean ground beef or turkey for a healthier casserole.
  • Do not overfill with liquid to avoid sogginess.
  • Add fresh chips or tortillas at the end for better texture.
  • Can be assembled ahead and refrigerated up to 24 hours.
  • Freezes well for up to 2 months before cooking.
