Egyptian Beef Goulash

A traditional Egyptian goulash with seasoned ground beef layered inside flaky phyllo pastry — crispy, savory, and perfect for dinner.

Ingredients
  

  • Beef Filling
  • 2 tbsp olive oil
  • 1 large onion finely diced
  • 1 lb 450 g ground beef
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ¼ tsp ground cinnamon
  • 2 tbsp tomato paste
  • ½ cup beef broth
  • Pastry
  • 1 lb 450 g phyllo dough, thawed
  • ½ cup melted butter or ghee
  • Custard Topping
  • 1 cup milk
  • 1 egg
  • Pinch salt & pepper

Method
 

  1. Heat olive oil and sauté onion until soft.
  2. Add beef; cook until browned.
  3. Stir in salt, pepper, paprika, cinnamon, tomato paste, and broth. Simmer to thicken. Cool slightly.
  4. Preheat oven to 350°F (175°C). Butter a 9×13-inch dish.
  5. Layer 8–10 sheets of phyllo, brushing each with butter.
  6. Spread beef filling over the layers.
  7. Top with remaining phyllo, buttering each sheet. Tuck edges.
  8. Score into squares or diamonds.
  9. Whisk milk, egg, salt, and pepper; pour over pastry.
  10. Bake 35–40 minutes until golden. Rest 10 minutes and serve.

Notes

Add a pinch of nutmeg or allspice for deeper flavor.
Assemble earlier in the day and bake just before serving.
