Preheat oven to 375°F (190°C). Grease a casserole dish.
Heat butter and olive oil in a large skillet over medium heat.
Add onions and cook for 20–25 minutes until caramelized.
Stir in garlic, thyme, and Worcestershire sauce. Cook 1 minute.
Add dry orzo and stir for 1 minute.
Pour in chicken broth and heavy cream. Season with salt and pepper.
Stir in cooked chicken.
Mix in half of the Gruyère and mozzarella cheese.
Transfer mixture to casserole dish.
Top with remaining Gruyère, mozzarella, and Parmesan cheese.
Bake uncovered for 20–25 minutes until bubbly and golden.
Rest 5 minutes before serving. Garnish if desired.
