Method
- Preheat the oven
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Season the chicken
- Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and paprika.
- Prepare the glaze
- In a small bowl, mix together the apricot preserves, soy sauce, Dijon mustard, and minced garlic until smooth.
- Arrange the chicken
- Place the seasoned boneless skinless chicken thighs in the prepared baking dish and drizzle with olive oil.
- Add the glaze
- Pour the apricot glaze over the chicken, making sure each piece is well coated.
- Bake the chicken
- Bake for 25–30 minutes until the chicken is fully cooked and the glaze becomes thick and slightly caramelized.
- Serve
- Remove from the oven, garnish with parsley or thyme, and serve warm.
Notes
For extra caramelization, broil the chicken for the last 2–3 minutes.
Always cook chicken to an internal temperature of 165°F (74°C).
This recipe also works well with chicken breasts if you prefer quick chicken breast meals.
Serve with rice, roasted vegetables, or mashed potatoes for a complete dinner.
