  • 6 boneless skinless chicken thighs
  • ½ cup apricot preserves
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh parsley or thyme optional garnish

Method
 

  1. Preheat the oven
  2. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  3. Season the chicken
  4. Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and paprika.
  5. Prepare the glaze
  6. In a small bowl, mix together the apricot preserves, soy sauce, Dijon mustard, and minced garlic until smooth.
  7. Arrange the chicken
  8. Place the seasoned boneless skinless chicken thighs in the prepared baking dish and drizzle with olive oil.

Notes

For extra caramelization, broil the chicken for the last 2–3 minutes.
Always cook chicken to an internal temperature of 165°F (74°C).
