- Prepare the chicken
- Season the chicken breast with olive oil, salt, and black pepper.
- Grill the chicken
- Heat a grill pan or outdoor grill over medium heat. Cook the chicken for about 6–7 minutes per side until fully cooked and juicy.
- Toast the bread
- Slice the ciabatta sandwich rolls and toast them lightly on the grill or in a skillet until golden.
- Add cheese
- Place mozzarella slices on the hot grilled chicken and allow them to melt slightly.
- Assemble the sandwich
- Spread basil pesto on the bottom half of each ciabatta roll. Add grilled chicken, tomato slices, and arugula.
- Finish and serve
- Top with the other half of the bread and serve warm.
Notes
For extra flavor, marinate the chicken with garlic and lemon before grilling.
Ciabatta bread works best because it holds the fillings well.
Add avocado, roasted peppers, or caramelized onions for more flavor.
You can also use whole-grain bread for a healthier version.
