  • 2 chicken breasts
  • 2 tablespoons olive oil

  • 4 tablespoons basil pesto
  • 4 slices mozzarella cheese
  • 2 ciabatta sandwich rolls
  • 1 tomato sliced
  • 1 handful arugula or lettuce
  • 2 tablespoons mayonnaise optional

Method
 

  1. Prepare the chicken
  2. Season the chicken breast with olive oil, salt, and black pepper.
  3. Grill the chicken
  4. Heat a grill pan or outdoor grill over medium heat. Cook the chicken for about 6–7 minutes per side until fully cooked and juicy.
  5. Toast the bread
  6. Slice the ciabatta sandwich rolls and toast them lightly on the grill or in a skillet until golden.

  9. Assemble the sandwich
