Healthy Banana Muffins

Soft and moist Healthy Banana Muffins made with ripe bananas and wholesome ingredients. These easy muffins are naturally sweet, nutritious, and perfect for breakfast, snacks, or healthy baking for the whole family.

Ingredients
  

  • 2 –3 ripe bananas mashed
  • 1 1/2 cups whole wheat flour or all-purpose flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk or plant-based milk
  • 1/4 cup vegetable oil or melted coconut oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tin with liners.
  2. Mash bananas in a bowl until smooth.
  3. Add eggs, honey (or maple syrup), milk, oil, and vanilla extract and mix well.
  4. In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
  5. Add dry ingredients to wet ingredients and mix gently until just combined.
  6. Divide batter evenly into muffin cups (about 3/4 full).
  7. Bake for 18–22 minutes until a toothpick comes out clean.
  8. Let cool before serving.

Notes

Use very ripe bananas for natural sweetness
Do not overmix the batter
Add nuts or chocolate chips if desired
Store in an airtight container for up to 4 days
