Method
- Preheat oven to 180°C (350°F) and line a muffin tin with liners.
- Mash bananas in a bowl until smooth.
- Add eggs, honey (or maple syrup), milk, oil, and vanilla extract and mix well.
- In another bowl, combine flour, baking powder, baking soda, cinnamon, and salt.
- Add dry ingredients to wet ingredients and mix gently until just combined.
- Divide batter evenly into muffin cups (about 3/4 full).
- Bake for 18–22 minutes until a toothpick comes out clean.
- Let cool before serving.
Notes
Use very ripe bananas for natural sweetness
