Ingredients
  

  • Strawberries
  • 4 cups fresh strawberries sliced
  • ¼ cup granulated sugar
  • 1 tsp lemon juice optional
  • Shortcake Biscuits
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold unsalted butter cubed
  • ¾ cup whole milk or heavy cream
  • 1 tsp vanilla extract
  • Whipped Cream
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. In a bowl, combine sliced strawberries, sugar, and lemon juice. Let sit for 20–30 minutes until juicy.
  2. Preheat oven to 425°F (220°C) and line a baking sheet.
  3. Mix flour, sugar, baking powder, and salt in a bowl.
  4. Cut in cold butter until mixture is crumbly.
  5. Add milk and vanilla; stir until dough forms.
  6. Drop or shape dough into biscuits on baking sheet.
  7. Bake for 12–15 minutes until golden brown. Cool slightly.
  8. In a chilled bowl, whip cream, powdered sugar, and vanilla until soft peaks form.
  9. Slice biscuits in half. Layer strawberries and juice on bottom half.
  10. Add whipped cream and top with biscuit lid.
  11. Add extra strawberries and cream if desired. Serve immediately.

Notes

  • Use very cold butter for flaky biscuits.
  • Let strawberries rest to release natural syrup.
  • Assemble just before serving for best texture.
  • Store components separately for up to 24 hours.
  • Can be made with store-bought biscuits for a quicker version.
