Method
- Preheat oven to 425°F (220°C). Line a baking dish with parchment or lightly grease.
- Pat chicken thighs dry. Rub with olive oil, salt, pepper, and paprika.
- Place chicken in the dish, skin side up if using skin-on.
- Mix honey, soy sauce, garlic, and lemon juice. Pour half over the chicken.
- Bake for 25–35 minutes depending on thigh type.
- In a saucepan, combine remaining sauce with cornstarch and water. Simmer until thick.
- Brush thickened sauce over chicken. Bake 5–10 more minutes.
- Broil 2–3 minutes for caramelized edges.
- Rest 5 minutes before serving.

Internal temperature must reach 165°F (75°C).
