Ingredients
  

  • 2 large chicken breasts or 4 honey mustard chicken thighs
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 1 tablespoon whole grain mustard optional
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 12 slider buns
  • 6 slices cheddar or Swiss cheese halved
  • Lettuce or arugula
  • Thinly sliced red onion optional

Method
 

  1. Prepare the Chicken
  2. Season chicken with salt, pepper, and garlic powder.
  3. Cook the Chicken
  4. Heat olive oil in a skillet over medium heat. Cook chicken 5–7 minutes per side, or until internal temperature reaches 165°F. Remove and let rest 5 minutes.
  5. Make the Honey Mustard Sauce
  6. In a small bowl, whisk together honey, Dijon mustard, and whole grain mustard.
  7. Coat the Chicken
  8. Slice or shred cooked chicken. Toss in honey mustard sauce until fully coated.
  9. Assemble the Sliders
  10. Preheat oven to 350°F (175°C).
  11. Place bottom halves of slider buns in a baking dish. Add honey mustard chicken, cheese slices, and toppings. Place top buns over sliders.
  12. Bake
  13. Bake for 5–7 minutes until cheese melts and buns are lightly toasted.
  14. Serve
  15. Serve warm with your favorite sides.

Notes

For a healthier option, use whole wheat buns and grilled chicken breast.
Turn leftovers into honey mustard chicken salad for a lighter meal.
To make sheet pan style: roast chicken and vegetables together at 400°F for 20–25 minutes before assembling.
