A creamy and crunchy Keto Broccoli Salad made with fresh broccoli, cauliflower, cheese, and a rich low-carb dressing. This healthy broccoli salad is perfect for keto meal prep, BBQs, or as an easy side dish.

Ingredients
  

  • Salad
  • 5 cups broccoli florets chopped small
  • 1 cup cauliflower florets chopped
  • ½ cup cheddar cheese shredded
  • ¼ cup red onion finely diced
  • ½ cup cucumber diced
  • ¼ cup sunflower seeds
  • ¼ cup sliced almonds
  • ¼ cup fresh parsley chopped
  • Dressing
  • ¾ cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Wash and chop broccoli and cauliflower into small florets.
  2. Dice cucumber, onion, and parsley.
  3. In a large bowl, combine broccoli, cauliflower, cheddar cheese, cucumber, onion, sunflower seeds, almonds, and parsley.
  4. In a separate bowl, whisk mayonnaise, sour cream, vinegar, mustard, lemon juice, garlic powder, salt, and pepper until smooth.
  5. Pour dressing over salad and toss until evenly coated.
  6. Cover and refrigerate for at least 30 minutes.
  7. Stir and serve chilled.

  • Best made ahead for improved flavor.
  • Keep broccoli pieces small for better texture.
  • Add grilled chicken for a full meal option.
  • Greek yogurt can replace sour cream if desired.
