Korean BBQ Chicken Bowls

These Korean BBQ Chicken Bowls are packed with juicy chicken, sweet and savory Korean-inspired barbecue sauce, rice, and fresh vegetables. Perfect for easy bbq chicken meals and healthy weeknight dinners.

Ingredients
  

  • Chicken
  • lbs boneless chicken thighs or chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Korean BBQ Sauce
  • ¼ cup soy sauce
  • 2 tbsp brown sugar or honey
  • 1 tbsp sesame oil
  • 3 garlic cloves minced
  • 1 tsp grated ginger
  • 1 tbsp rice vinegar
  • 1 tbsp gochujang or chili paste optional
  • Bowl Ingredients
  • 3 cups cooked rice
  • 1 cucumber sliced
  • 1 carrot shredded
  • 1 avocado sliced
  • 1 cup edamame
  • Green onions for garnish
  • Sesame seeds
  • Optional Additions
  • Kimchi
  • Roasted sweet potatoes
  • Pickled vegetables
  • Fried egg

Method
 

  1. In a small bowl, whisk together soy sauce, brown sugar or honey, sesame oil, garlic, ginger, rice vinegar, and gochujang.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season chicken lightly with salt and pepper.
  4. Cook chicken for 5–6 minutes per side until golden brown and fully cooked.
  5. Pour Korean BBQ sauce into skillet and cook for 2–3 minutes until sauce thickens and coats chicken.
  6. Remove chicken from skillet and slice into bite-sized pieces. Toss chicken back into sauce.
  7. Divide cooked rice among serving bowls.
  8. Top with chicken, cucumber, carrots, avocado, and edamame.
  9. Garnish with sesame seeds and green onions.
  10. Serve warm with optional toppings if desired.
