- Sear the Roast (Optional but Recommended)
- Heat olive oil in a large skillet over medium-high heat. Sear chuck roast on all sides until browned (about 2–3 minutes per side).
- Prepare the Sauce
- In a bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, beef broth, rice vinegar, and black pepper.
- Assemble in Crock Pot
- Place chopped carrots and sliced onions at the bottom of the slow cooker.
- Add the seared roast on top.
- Pour sauce mixture over the roast.
- Slow Cook
- Cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is fork-tender.
- Thicken Sauce (Optional)
- Mix cornstarch with 2 tablespoons water to create a slurry. Stir into the slow cooker during the last 30 minutes of cooking to thicken sauce.
- Serve
- Shred or slice the beef and spoon sauce over the top. Garnish with green onions and sesame seeds before serving.
Notes
Use a well-marbled chuck roast for the most tender results.
