Ingredients
  

  • 3 –4 lb beef chuck roast
  • 1 tablespoon olive oil
  • ½ cup low-sodium soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 cup beef broth
  • 1 tablespoon rice vinegar
  • 1 teaspoon black pepper
  • 3 carrots chopped
  • 1 onion sliced
  • 2 tablespoons cornstarch optional, for thickening
  • 2 tablespoons water for cornstarch slurry
  • Green onions and sesame seeds for garnish

Method
 

  1. Sear the Roast (Optional but Recommended)
  2. Heat olive oil in a large skillet over medium-high heat. Sear chuck roast on all sides until browned (about 2–3 minutes per side).
  3. Prepare the Sauce
  4. In a bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, beef broth, rice vinegar, and black pepper.
  5. Assemble in Crock Pot
  6. Place chopped carrots and sliced onions at the bottom of the slow cooker.
  7. Add the seared roast on top.
  8. Pour sauce mixture over the roast.
  9. Slow Cook
  10. Cook on LOW for 8 hours or HIGH for 4–5 hours, until beef is fork-tender.
  11. Thicken Sauce (Optional)
  12. Mix cornstarch with 2 tablespoons water to create a slurry. Stir into the slow cooker during the last 30 minutes of cooking to thicken sauce.
  13. Serve
  14. Shred or slice the beef and spoon sauce over the top. Garnish with green onions and sesame seeds before serving.

Notes

Use a well-marbled chuck roast for the most tender results.
