Ingredients

  • lbs boneless skinless chicken breast, cubed
  • 1 red bell pepper chunked
  • 1 green bell pepper chunked
  • 1 red onion chunked
  • Wooden or metal skewers
  • Lemon Herb Marinade
  • cup olive oil
  • Juice of 2 lemons
  • 3 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Dijon mustard optional
  • Optional Garnish
  • Fresh parsley
  • Lemon wedges
  • Crumbled feta cheese

Method
 

  1. In a bowl, whisk olive oil, lemon juice, garlic, oregano, thyme, parsley, paprika, salt, pepper, and Dijon mustard until combined.
  2. Add chicken and mix well until fully coated.
  3. Cover and marinate in the refrigerator for at least 1 hour.
  4. Preheat grill to medium-high heat (or oven to 425°F / 220°C).
  5. Thread chicken, peppers, and onion onto skewers.
  6. Grill for 10–12 minutes, turning occasionally, until chicken reaches 165°F (74°C).
  7. OR bake for 18–22 minutes, flipping halfway.
  8. Remove from heat and let rest for 5 minutes.
  9. Garnish with parsley, lemon wedges, or feta if desired.
  10. Serve warm.

Notes

  • Do not over-marinate chicken breast (1–6 hours is ideal).
  • Chicken thighs can be used for extra juiciness.
  • Soak wooden skewers for 30 minutes before grilling.
  • For a richer flavor, brush with melted butter and lemon after cooking (lemon butter chicken style).
  • Serve with potatoes for a Greek chicken and potatoes variation.
  • Store leftovers in the refrigerator for up to 3 days.
